Chick Peas, Potatoes & Mixed Veg in a Green Thai Curry Sauce
Ingredients:
Can of chick peas, coconut milk, sachet Blue Dragon Thai green curry paste, medium potato, large onion, garlic paste, ginger paste, frozen mixed veg, coriander leaves.
Gently fry onion until translucent, add garlic and ginger paste, after a few minutes add coconut milk, stir in curry paste and bring to the boil before adding chick peas, sliced potatoes, veg and coriander leaves. Season to taste.
Serve with rice or noodles
