Tofu Mince

A couple of Vegan friendly products to keep in your store cupboard. They are particularly tasty with tofu based dishes however, here is a recipe for a Thai curry using the red curry paste:
Tablespoon of vegetable ghee
Butternut squash, peeled and chopped into cubes
Finely chopped onion
1 tbs red curry paste
Sachet coconut paste
250g green beans
Heat the ghee in a pan. Add the butternut squash and onions and cook gently soft and golden-don't let them brown. Add 1 tbs red curry paste and stir in gently and cook for about 1 minute. Mix the sachet of coconut paste with 300 mls of boiling water. Bring to the boil and simmer for 10 mins. Then add the beans for about 5 mins until everything is tender. Serve with noodles or rice
